Being a mom means you forget to eat and even drink your cup of coffee, right? While most days, I mean every day, are pretty hectic, it doesn't have to be that way.
One way that I make sure to get my nutrition, especially in the early mornings, is by making these simple oatmeal bites. Chances are you most likely will have these ingredients in your kitchen, so why not use it to your advantage.
I found a ton of recipes on Pinterest but I tweaked it a bit by adding and changing specific ingredients. Instead of honey, I used maple syrup, and I added coconut flakes for some extra sweetness.
You can make these your own, so go ahead and use different ingredients! My next adventure is adding fruit to it like cranberries.
My Oatmeal Bites Recipe
- 1 Cup of rolled or quick oats
- 1/2 cup of peanut butter
- 1/2 cup of chocolate chips
- 1/2 cup of coconut flakes
- 1/3 cup of maple syrup
All you have to do is mix the ingredients. I personally find it easier to use a blender versus mixing it by hand. The key to make perfect sized balls are by using a measuring spoon. I used 1 teaspoon for my oatmeal bites. Once you've rolled them up, you can store it in the fridge!
And then they are ready to eat, so enjoy!
